Illuketia’s cuisine is designed to incorporate the fresh produce combining the clever use of local herbs and spices. Fruits cuts, vegetables, rice and herbs used in the cuisine are all organically grown in the estate. Relish a host of Sri Lankan dishes that include garden curries, fish, shrimp, squid and lobster as well. Lunch is usually snacks, toasted sandwiches or salads followed by a sumptuous three- to four-course dinner. The resort’s chefs are also well known for their desserts, cakes and cookies. Guests can relax in the 25-meter long (75 feet) swimming pool or lay on comfortable deck chairs and cushions scatted on the lawns. Cooking classes for traditional Sri Lankan cuisine are also available on request. Another highlight of the resort is its richness in natural wonders. One can find 156 bird species, 556 tropical plants, 20 mammals, pond fishes and a variety of reptiles, land monitor lizards and frogs living discreetly within the boundaries.
